Trained at William Angliss Institute, he began in Greek kitchens and traveled through Europe, where he mastered the art of Indian fusion. Now, as Head Chef at Ipsos in Victoria, Ricardo crafts dishes that are as innovative as they are delicious, blending global flavors with a modern twist.
Chef Shanvi: Born in Chandigarh and raised in Pune, Shanvi honed her skills at Le Cordon Bleu Melbourne. Her culinary path led her to Elma, where she specialized in Middle Eastern cuisine. At Tonka, Shanvi’s creativity shines as she experiments with pastries and crafts modern Indian delights.
