Starting 1 September 2019, the Sunday Champagne Brunch menu at Edge will be given a grand refresh, featuring a sumptuous range of classic brunch favourites elevated with contemporary flair, as well as signature dishes from Chef Howard Leong’s collection of secret recipes inspired by his travels around the world.
Dive into Sunday indulgence with an assortment of Seafood on Ice including Alaskan King Crab, Fine de Claire Oyster and Boston Lobster, and an array of Sashimi Selection including Blue Fin Tuna, Tasmanian Salmon and Hamachi Fish. Continue to feast on a stunning array of light dishes such as Crab and Chuka Hotate Chirashi, Takoyaki with Bonito Flakes and Mayonnaise, as well as Swiss Raclette Cheese with Traditional Accompaniments.
The mains are all about the signatures, ranging from Worcestershire Angus Beef Flank, Sous Vide Kurobuta Pork Ribs with Liquorice Sauce, Pan Seared Foie Gras with Passion Fruit Apple Chutney and Brioche Bun, Frenched Lamb Rack with Mustard Glaze, Steamed Herbal Chicken with Chinese Mushrooms and Red Dates to Baked Monkfish with Poached Green Asparagus and Rich Morel Beurre Blanc. Moving on, tuck into heartier options including Squid Ink Tagliolini with King Crab, Khao Pad Sapparot (Thai Pineapple Fried Rice), Wok-fried Silky Egg Seafood Hor Fun and Vermicelli and Nyonya Laksa with House-made Prawn Otah-Otah.
Cap off the meal on a veritably sweet note with Molten Strawberry Chocolate Cake, Nitro Pop, Apple Strudel, Raspberry Hibiscus Entremet, Wine Jelly Berries Verrine, and a sinful Chocolate Fondue Fountain with Strawberries, Apricots, Financiers, Churros and more.
