The latest addition to Singapore's cocktail scene is also the first Latin-American cocktail bar in the city
Chances are, you know a thing or two about South American food. But when it comes to their spirits, we most certainly can’t say we’re experts; although we absolutely dig South American cocktails like piña coladas and margaritas. So of course the news that new cocktail bar Vasco only uses Latin America spirits to make their cocktails (this means no whiskey or gin!) had us intrigued, and we knew we had to pay the newcomers of HongKong street a visit.
The first of its kind in Singapore, Vasco celebrates the Latinos’ free-spirited outlook in life. Flickering candles illuminate the wine-red walls, giving the drinking den a mysterious and sensual aura — ideal for an intimate sesh with your beau, we think! Start the night with a glass of Cusco Puta ($24); made with pisco (grape brandy), strawberry, capsicum, chilli and lime. The tangy cocktail ends off with a hint of spiciness that’s easy on the palate. Otherwise, the refreshing Del Monte Cartel (tequila, mango, agave, black pepper and lime; $21) also makes for a good aperitif. The black pepper garnish gives the drink a kick, leaving your lips with a nice fiery tingle and looking naturally bee-stung (how nice). If you love classic cocktails, try the Pisco Sour ($21) and Caipirinha ($21) – the national cocktails of Peru,Chile, and Brazil.
The open-concept kitchen rolls out delicious and sophisticated bites that are worth every penny. Pair your Cusco Puta with a generous serving of zingy salmon ceviche ($19) that’s made with tiger milk; line your stomach with some piping hot Empanadas (3 for $12); or fill up on their decadent meat balls that’s coated in a delicious secret sauce ($24). The real winner of the night has to be their undeniably delicious El Cubano sandwich ($22); grilled to a crisp and packed with a hearty portion of slow-roasted pork and cheese.
Move to the bar when you’ve finished – it’s the best spot to experience Vasco. The bartenders embody Latin American’s friendly nature (Latin Americans are the happiest people in the world!), and are extremely hospitable. We decided to end the night with their signature cocktail, The Girl from Ipanema. Made with cachaça (Brazilian rum made from Sugarcane), lime, passion fruit and Brazil nuts; the rich, malty flavour made this cocktail an ideal nightcap.
