Chazuke is a comforting traditional Japanese dish that is anything but basic, and thanks to Zenraku we’re getting a taste for ourselves.
What comes to mind when you think of Japanese food? Sushi, sashimi and ramen are clear winners, but how about dashi chazuke? Before Zenraku opened up in Grand Indonesia, we had never heard of this brothy traditional dish before. Turns out, dashi chazuke is a very common rustic dish enjoyed in Japan since the Heian period. In Japan, the dish is often enjoyed as an afternoon snack at the izakaya, whereas at Zenraku, the brothy dish is available at all times of day. Helmed by Chef Yamamoto of Abura Soba, this casual Japanese eatery specialises in all types of dashi chazuke.
All of the main dishes are accompanied with a flask that is normally used for hot tea. Before you think that your food actually comes with a drink, you should know that inside it is the the dashi broth waiting to be poured into your rice bowl. Dashi is the savoury soup stock made of ingredients rich in umami flavours like bonito fish flakes and dried kelp.
For your rice base, add abura salmon, sashimi red snapper, teriyaki unagi, fried vegetable tempura, salted cod roe, sukiyaki beef, or sliced chicken cashu, sprinkled with spring onions and toppings like mitsuba leaves and sliced nori. You can also have the somen version with vegetable tempura or sukiyaki beef.
Our favourite is their Salmon Dashi Chazuke, and if you’re not into raw fish, don’t worry because the salmon cooks perfectly as soon as the hot dashi is poured into the bowl. Feeling especially indecisive? There’s the Sampler Dashi Chazuke consisting of three sampler bowls of Unagi, Beef, and Chicken Dashi Chazuke, so you’ll get a taste everything you want to try.

Try their Poke Tuna Sashimi Yuzu Kosho, Korokke, Hiyashi Tomato, Kakiage, Kinpira, Edamame, and our favourite, Ebi Katsu, which comes with a delicious sweet and spicy mayo.
