Take a Thai culinary journey with Ian Kittichai
Known for his unique influence on Thai cuisine, Chef Ian will join guests on board Eastern and Oriental Express for a culinary journey through his home country. Using his unique approach to classic flavours and local Thai ingredients, Chef Ian, together with the train’s Executive Chef Yannis Martineau, will prepare exceptional breakfast, afternoon tea and dinner menus during the four-day/three-night culinary journey.
The dinner menu itself will consist of a tarlet of chopped yellowfin tuna tartare and peanut with a Petchaburi palm sugar-fish dressing, followed by spice-rubbed and charcoal-grilled chicken flambéed at the table as the main course and jasmine flower infused panna cotta as dessert.
And don’t worry, the exciting journey doesn’t stop inside the train. Chef Ian, whose experience include a stint at Sydney’s legendary French fine-dining restaurant Claude’s, will also guide the guests on a tour to the local food market at Kanchanaburi, Thailand. Hop off the train and learn a thing or two about cooking from the master while exploring the fragrant local produce in his own country. With leading Australian restaurateur and chef Luke Mangan on board, Eastern and Oriental Express invites guests to join a gastronomic adventure from Singapore to Bangkok for two nights. Before boarding the train to travel through Malaysia’s rural landscapes all the way to Bangkok, guests, together with Chef Luke, will start off by exploring Singapore’s exotic food market in the morning. In the evening, a contemporary three-course dinner will be prepared by the Chef himself, which will be followed with a signing session of his latest book ‘Salt Grill: Fine Dining for the Whole Family’.
