¾ cup Hershey’s Cocoa
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
2 eggs or 3 small organic eggs
1 cup milk
½ cup vegetable oil
2tsp. vanilla extract
1 cup boiling water
1 stick (1/2 cup) butter or margarine
2/3 cup Hershey’s Cocoa
3 cups powdered sugar
1/3 cup milk
1 tsp. vanilla extract
1. Heat oven to 350 degrees F. Grease and flour two 9-in round baking pans.
2. Combine dry ingredients in a large bowl. Add eggs, milk, oil and vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into pans.
3.Bake 30-35 minutes or until wooden pick inserted in centre comes out clean. Cool for 10 minutes; remove from pans to wire racks. Cool completely.
4. To make frosting, melt butter and stir in cocoa. Alternately add powdered sugar and milk , beating on medium speed to spreading consistency. Add more milk if needed. Stir in vanilla.
5. Fill the middle of the cake with a layer of frosting, then cover the entire cake. We love that you can cover any imperfections!
Tip: You can even make cupcakes by lining 2-1/2-in muffin cups with paper bake cups and fill 2/3 full with batter and bake at 350 degrees for 22-25 minutes. Cool before frosting.
