
This veggie meat burger will convert even the most serious meat eaters - trust us, we know.
In celebration of our Live Better month we asked clean eating guru Michelle Santoso of Forking Clean to share one of her easy-to-make recipes. After trying it out for ourselves, here’s the verdict: Even the most skeptic meat-eaters will love this seriously satisfying black bean vegan burger. The mashed up black bean coupled up with the flaxseed, blitzed oats, onions and seasoning really mimic the texture and heartiness of a meat burger (we’re not even joking) and the vegan garlic aioli is packed with incredible flavour. For a gluten free option, Michelle recommends stacking up iceberg lettuce in replacement of buns. Ingredients are readily available in your nearest supermarket, so no more excuses!

Forking Clean Black Bean Burgers with vegan garlic aioli (Serves 4)
Ingredients
1.5 | tbs | Ground flaxseed |
1/2 | can | black beans, mashed |
1/2 | cup | grated carrots |
1/4 | cup | chopped cilantro |
2 | cloves | garlic |
1/4 | cup | chopped yellow onions |
1/4 | cup | sunflower seeds, toasted |
1/2 | cup | rolled oats, blitzed this in the processor and turn it into flour |
2 | tsp | grape seed oil (coconut oil works too!) |
1/2 | tbs | soysauce |
1/2 | tsp | chili pow |
1/2 | tsp | oregano |
1/2 | tsp | cumin |
1/2 | tsp | salt |
black pepper |
Notes
All you really need here is your hand, a blender, and only a little bit of time. The best part about this recipe is that it doesn’t require you to spend too much time on prep! What else goes into the bun? At Forking Clean, we love to use: thinly sliced purple cabbage, julienned carrots, romaine lettuce and slices of cucumber.
Directions
Step 1) Mash your black beans, stir everything else in with a spatula and pre heat your oven to 200C.
Step 2) Oil up your pan and start shaping your patties. Place in your pan and bake in the oven for 10-12 mins on each side.
Forking Clean Garlic Vegan Mayo (Makes 1/2 cup)
Ingredients
1/2 | cup | grape seed oil |
1/4 | cup | soymilk plain |
1/2 | tsp | cider vinegar |
1/2 | tbls | lemon juice |
1/2 | tsp | coconut sugar syrup or coconut sugar |
1/4 | tsp | wholegrain mustard |
1/2 | tsp | salt |
1 | clove | garlic |
Directions
Blend all the ingredients together until emulsified. Chef’s tip: Add pepper, cilantro, mint or basil for added flavour!
