My latest find is Aera, a Nordic-inspired fine dining establishment that\u2019s recently relocated from Wan Chai to <a href=\"https:\/\/thehoneycombers.com\/hong-kong\/guide-to-sheung-wan\/\" target=\"_blank\" rel=\"noopener\">Sheung Wan<\/a>. Championing innovative cuisine, exceptional service, and a refined yet comfortable dining experience, here\u2019s why Aera has quickly become one of my recent favourites for a special meal.<\/p>\n<div Chai, Aera now occupies an intimate 30th-floor space in Sheung Wan. To showcase the expansive Victoria Harbour views of the location, the restaurant stages the main bar against this gorgeous backdrop with an open prep station and floor-to-ceiling windows. The design emphasises light, with wooden accents spanning from the main bar to the <a href=\"https:\/\/thehoneycombers.com\/hong-kong\/private-dining-rooms-hong-kong\/\" target=\"_blank\" rel=\"noopener\">private dining room<\/a>. Despite its compact layout, Aera sports a spacious yet cosy atmosphere for a comfortable meal. From the moment you step out of the lift, you\u2019re greeted by a quietly luxurious yet homey atmosphere with a friendly, welcoming vibe. Menus rotate constantly to interpret Chef Yau\u2019s signature Nordic flair with peak seasonal produce.<\/p>\n<p>Doing away with a usual restaurant setting, the new bar seating brings diners closer to the team \u2013 whether it\u2019s the chefs, sommeliers, or anyone in between. My meal kicks off with two amuse bouche infused with representative flavours of Scandinavia. The bite-sized <strong>Rosti\/ Lardo\/ Lingonberry<\/strong> delivers an umami tang, while the <strong>Egg\/ Pea\/ Amaebi<\/strong> presents a delicate, Nordic-inspired chawanmushi \u2013 both offering an exciting taste of what\u2019s to come<\/p>\n<p>A highlight is the <strong>Dill\/ Roe\/ Lohikeitto<\/strong> \u2013 Aera\u2019s take on the traditional Finnish salmon soup featuring kanpachi wrapped in housemade dashi \u201cliangpi\u201d noodles. I always look forward to the bread course, and was particularly impressed with the <strong>Soy\/ Yeast\/ Horseradish<\/strong>. The roasted Three Yellow Chicken leg is tender, flavourful, and remarkably juicy, with its mouth-watering aromas filling the dining room before it\u2019s even served. For your main, you\u2019ll get a choice between <strong>Pigeon\/ Black Tea\/ Pepper<\/strong> and <strong>A3 Wagyu\/ Truffle\/ Celeriac<\/strong>. The <strong>Banana\/ Miso\/ Butter<\/strong> is a refreshing and umami palate cleanser, beautifully blending miso with banana and burnt butter ice cream. Given that I visited on a grey and storm-ridden Monday night, I indulged in the wine pairing.<\/p>\n<p>House sommelier Teresa Hitchin handpicks bottles from <a href=\"https:\/\/www.domaine-gjbott.fr\/en\/\" target=\"_blank\" rel=\"noopener\">Domaine Graeme &amp; Julie Bott<\/a> to compliment chefs Yau\u2019s and Foh\u2019s creations. While some might lament the reduced number of seats and its compact space, I find the intimate arrangements a thoughtful touch that challenges traditional perceptions of <a href=\"https:\/\/thehoneycombers.com\/hong-kong\/fine-dining-restaurants-in-hong-kong\/\" target=\"_blank\" rel=\"noopener\">fine dining<\/a>.
