3. Hong Kong Cuisine 1983
If your dad is a whisky fan, then a special meal at Hong Kong Cuisine 1983 will be the ultimate treat for him this Father’s Day in Hong Kong. Renowned Scotch whisky distillery, Highland Park, is collaborating with Chef Silas Li to celebrate the launch of its Vintage 1990 Release. Offered from 16 to 30 June, this exclusive promotion is limited to only 20 sets, with an exquisite eight-course menu alongside a whisky pairing (from $3,000). Embracing the theme “Different by Nature” with an East-meets-West approach, Chef Silas meticulously infuses Highland Park whisky into the finest seasonal bounty (such as summer truffles and chanterelle mushrooms) to enhance the natural flavour of the ingredients while showcasing the distinct nuances of each vintage. The dishes are also paired with whisky from Highland Park that range from 12 to 30 years old.
One of our favourites on the menu is the Zucchini Flower Stuffed with Roasted Duck Glutinous Rice. Infused and paired with Highland Park 21 Years Old, the buttery whisky beurre blanc sauce pulls all the elements of the dish together in harmony. The hearty Milk Poached Egg with Runny Whisky Morel Sauce, Carrot Purée, and Sautéed Italian Morel Mushroom Stuffed with Prawn Mousse is also a highlight for us, as the sweetness of the carrots and the earthiness of the freshly shaved summer truffles add great depth to the flavour profile.
