Created by the Group’s Executive Chef, Yannick Guillemot, the dinner will be graced by the presence of the esteemed winemaker Matthew Ward from the award-winning winery of Catalina Sounds in Marlborough, New Zealand’s most famous and prolific wine region. As a Marlborough native, Matthew has over 20 years of experience in the wine industry and is recognised as one of the country’s top winemakers, committed to producing exceptional wines that reflect the unique terroir of the region.
At the dinner, guests will be indulged and pampered with an extraordinary culinary feast while being guided by Matthew through a tasting of the wines for a fun, interactive and one-of-a-kind evening. In addition to introducing the renowned Catalina Sounds winery, Matthew will also share his passion for winemaking and the story behind each of Catalina Sounds signature wines at the event. This will give diners a fascinating glimpse into the world of wine production and enable them to gain a deeper understanding of the various wines’ characteristics, flavours, and aromas.
The dinner features a luscious 5-course menu centred around seafood and meat that takes diners on a culinary adventure from Scallop Ceviche to Alaskan Black Cod and Chicken Ballotine to the restaurant’s signature Beef Wellington before finishing off with a heavenly Manchego Cheese Curd & Fresh Cherries, and all for just HK$1,198 per person, subject to a 10% service charge.
Every dish has been expertly paired with Catalina Sounds and Sound of White’s exquisite wines, ranging from their very unique Barrel Fermented Sauvignon Blanc to Chardonnay and Pinot Noirs from different vintages, enhancing the diverse and sometimes complex flavour profiles.
