From 7 March to 11 March, Executive Chef Benjamin Cross and Head Chef Stephen Moore from KU DE TA Bali will be at Hong Kong’s renowned restaurant Test Kitchen to curate a modern Australian-Indonesian tasting menu to showcase their different and diverse approach to contemporary Asian cuisine.
The prototype menu consists of :
abalone + lardo + skewer
school prawns + corn custard + szechuan
tuna + burnt eggplant + daikon + toasted nori
scallop + xo + fregola + pancetta + butter
black cod + chilli paste
wagyu strip loin + enoki remoulade salad + mushroom puree + broth miso caramels
