To celebrate the anticipated reopening of Felix at The Peninsula Hong Kong, Chef Masateru Kiriyama will be gracing the revamped restaurant with a time-limited menu!
Chef Kiriyama has been Chef de Cuisine at Peter, The Peninsula Tokyo’s acclaimed fine dining restaurant, for the past 15 years. With well over two decades worth of experience under his belt, Chef Kiriyama bases his culinary philosophy on aroma, in close combination with taste, to bring out the nuances of his ingredients. He chooses to keep the dishes simple by using minimal sauces, so to bring out the natural, underlying flavours. Chef Kiriyama also chooses to use the freshest local produce available, as well as incorporating various Japanese ingredients.
In keeping with this philosophy, Chef Kiriyama has crafted a special five-course “Felix Experience,” which will be served at the restaurant until 4 October 2022. Highlights of the menu include a Scallop ceviche with fig, prosciutto, and mint chimichurri; Pan-fried foie gras and flan, with rhubarb compote and pistachio; Grouper meunière with braised turnip and salad, spinach purée, and horseradish sauce; and A5 Kagoshima sirloin with black sugar spice, sea urchin mashed potato, and shallot with skin.
