This staggering diversity comes from the centuries-old trade routes that brought spices and recipes from India, China, the Middle East and the Netherlands. The result? Incredible, complex flavours and dishes you won&#8217;t find anywhere else.<\/p>\n<p>In Bali, you can eat Indonesian food at every price point: from a IDR 20,000 <em>nasi campur<\/em> at a roadside <em>warung<\/em>, to a multi-course tasting menu from a two-Michelin-starred chef. Common options are: <em>nasi putih<\/em> (white rice), <em>nasi merah<\/em> (red rice), <em>nasi uduk<\/em> (rice in coconut milk), <em>nasi kuning<\/em> (turmeric rice), and <em>nasi goreng<\/em> (fried rice).<\/li>\n<li><strong>Nasi campur<\/strong> \u2014 Literally &#8220;mixed rice&#8221;, featuring sides of meat, veggies, and <em>sambal<\/em>. Every <em>warung<\/em> has its own version, and no two are quite the same.<\/li>\n<li><strong>Sambal<\/strong> \u2014 Indonesia&#8217;s famous chilli condiment. There are hundreds of variations, but my faves are <em>sambal matah<\/em> (Balinese, raw and fragrant)\u00a0and\u00a0<em>sambal terasi<\/em> (with fermented shrimp paste). Spice levels vary!<\/li>\n<li><strong>Rendang<\/strong> \u2014 A slow-cooked curry from West Sumatra, traditionally made with beef, simmered for hours in a complex spice paste. Rich, aromatic, and voted one of the &#8220;World&#8217;s Best Dishes&#8221; by CNN.<\/li>\n<li><strong>Babi guling<\/strong> \u2014 Bali&#8217;s most iconic dish, pictured above. Whole suckling pig stuffed with turmeric, galangal, lemongrass, shallots and chilli, slow-roasted on a spit. Crispy skin, tender meat, served with rice and <em>lawar<\/em>.<\/li>\n<li><strong>Lawar<\/strong> \u2014 A traditional Balinese dish of finely chopped meat (usually pork or chicken), vegetables, grated coconut and spices, often mixed with blood. It sounds confronting, but it&#8217;s an essential part of Balinese ceremonial food.<\/li>\n<li><strong>Sate <\/strong>\u2014 AKA satay, served with peanut or soy sauce. <em>Sate lilit<\/em> is Bali&#8217;s version: spiced minced fish or meat wrapped around a lemongrass stalk and grilled over coconut husks.<\/li>\n<li><strong>Gado-gado<\/strong> \u2014 Steamed vegetables, boiled egg, tofu and tempeh, dressed in peanut sauce and topped with <em>kerupuk<\/em> crackers.<\/li>\n<li><strong>Betutu<\/strong> \u2014 A traditional dish from Gianyar, usually grilled or roasted duck (&#8220;<em>bebek<\/em>&#8220;) or chicken (&#8220;<em>ayam<\/em>&#8220;).<\/li>\n<li><strong>Bumbu<\/strong> \u2014 The spice paste that forms the base of most Indonesian recipes. Chef Wayan Kresna Yasa is a big name in Bali&#8217;s food scene (he was the force behind Potato Head&#8217;s kitchens and Bali&#8217;s first zero-waste restaurant, Ijen), but this is his most personal project yet.<\/p>\n<p>The menu is built around his own family recipes and traditional Southeast Asian flavours \u2013 comforting and refined at the same time. I started with a round of small plates (terong bakar, gado-gado and crispy chicken wings), before moving on to his standout mains: braised beef knuckle <em>rendang<\/em>, and hay-smoked <em>bebek betutu<\/em>. The drinks menu is worth exploring too: traditional <em>jamu<\/em>, kombucha, and infusions made with Bali&#8217;s native flowers, herbs and spices. You might not expect these cafe icons to nail Indonesian food, but trust me \u2014 the food here is as authentic as it gets. There are two locations to choose from: one in Berawa, and one in the mountains of Munduk. The views in Munduk are breathtaking, but the Berawa venue is my favourite, built around a traditional Balinese pavilion.<\/p>\n<p>Then there&#8217;s the food. The menu is designed for sharing (the way Indonesians actually eat together) and the flavours are so authentic, they got the thumbs up from my notoriously hard-to-please family. The <em>Rendang Sapi<\/em> is perfectly slow-braised, and the chargrilled ribs in bumbu Bali are dangerously good.<\/p>\n<p>For lunch, the Nasi Campur Royal is the move (a platter of the kitchen&#8217;s best in one plate), and they even serve authentic Indonesian breakfast dishes (like the ones I grew up eating!).<\/p>\n<p>Whatever you do, don&#8217;t miss the <em>sambal<\/em> menu. There&#8217;s <em>sambal ulekan<\/em>, <em>sambal pedas<\/em> and the iconic <em>sambal matah<\/em> to name a few. As someone who eats <em>sambal<\/em> daily, I&#8217;m hard to impress. It\u2019s a nod to the family-style communal meals shared by 600+ local artisans and guests at John Hardy\u2019s original Ubud workshop.<\/p>\n<p>I chose a seat at the long timber table facing the gallery\u2019s lush lawn and picnic set-up. My lunch began with Kum Kum holy water infused with fragrant flowers, and a platter of delicate bites and two appetisers. Then, the feast continues with sharing-style mains which put the spotlight on local, small-scale fishermen and farmers. It&#8217;s become one of my go-to restaurants for honest, home-style Indonesian food done right. I love its humble and welcoming atmosphere too. Think simple wooden tables, warm lighting, and locals and travellers chattering and tucking into familiar favourites. The menu is a compilation of Ibu Bernadette\u2019s family recipes that she grew up on, and have been passed down through generations.<\/p>\n<p>I went straight for what they\u2019re famous for: Benadette\u2019s Famous Rendang. I chose beef, but there\u2019s a vegetarian option with chunks of jackfruit. It definitely lived up to its name: tender beef slowly cooked for a total of 12 hours over two days, rich coconut milk, and <em>rendang<\/em> spices \u2013 even my picky nephews demolished it!
