The Long Table is John Hardy’s communal, family-style feast that gives you a true taste of Indonesia’s culinary heritage. The tradition began more than 20 years ago at the breathtaking John Hardy Kapal Bamboo Boutique<\/a>\u00a0near Ubud \u2014 but you can now experience this signature banquet at the John Hardy Boutique & Gallery in Seminyak<\/a>, where a brand new menu awaits.<\/p>\n

The new menu is the work of Executive Chef Tomy Saputra, inspired by his childhood memories and family recipes. It\u2019s a love letter to the nostalgic flavours of the past, when dinners were dished up from humble hawker carts. For Indonesians, it’s a nostalgic feast. For everyone else, it’s a delicious taste of Indonesia’s most delicious secrets and lesser-known ingredients.<\/p>\n

The menu also highlights the power of working closely with local producers, as Chef Tomy sources seasonal, indigenous ingredients from across the archipelago \u2013 honouring farmers, fishers, and the stories behind each dish.<\/p>\n

Take a seat at The Long Table<\/h3>\n

The Long Table experience takes place below the boutique, overlooking an emerald green lawn and majestic Balinese temple. Once you\u2019ve settled into the breezy, al fresco setting, the feast begins. The table is quickly filled with a line-up of starters made from the day\u2019s freshest ingredients, plus a generous platter of krupuk<\/em> and spicy sambal<\/em>. With clay pots sizzling in the background, the scene is set for\u00a0the parade of plates that follow.<\/p>\n

Beautifully plated, the mains arrive family-style, served on giant platters for everyone to dive into. My favourite was the Sumatran beef short rib (Iga Bakar<\/em>) which is braised in tamarind and a fermented sweet soy sauce broth, then grilled on an open fire. I also loved the Tumis Jantung Pisang \u2013<\/em>\u00a0banana blossom saut\u00e9ed with leek and a smoky fish sambal<\/em>. And for a local Balinese classic, don\u2019t miss the Jukut Kelor Mesanten<\/em> \u2013 a rich coconut and moringa broth, simmered inside a young coconut and served with rice from the UNESCO-listed Jatiluwih terraces.<\/p>\n

To end on a sweet (and very Indonesian) note, Es Campur is prepared table-side using a vintage, hand-operated ice shaver. Es Campur is a shaved ice dessert, with colourful toppings and syrups that you can mix and match. You’ll definitely want your camera ready for this one.<\/p>\n

The drinks pairing: Jamu reimagined<\/h3>\n

To match the menu, you can opt for a jamu<\/em>-inspired drinks pairing. Jamu<\/em> is Indonesia\u2019s ancient herbal elixir, so each of the five paired cocktails or mocktails use all-local healing ingredients, like turmeric, tamarind, lemongrass, and ginger.<\/p>\n

The first pairing is poured directly from a bamboo cane, while another represents the holy water used in Balinese purification ceremonies. It’s the perfect match to such a cultural food experience, and it ties together seamlessly with the story behind it all.<\/p>\n
