It might be small in size, but it&#8217;s brimming with personality, warmth and a mix of locals and travellers every night. The energy comes from Bali-born owner and head mixologist Ketut, who brings years of Melbourne bar experience and a love of local ingredients to every pour.<\/p>\n<p>Perch at the bar and you\u2019ll see what makes this place so special. Ketut and his team mix with precision and warmth. The drinks are a mix of East and West, from the Ubud Old Fashioned and Pandan Colada, to the Pomelo Smoked Negroni. My latest obsession is the Marigold. It&#8217;s an ode to its namesake flower, with gin, passionfruit liqueur, fermented strawberry, Prosecco and house-made marigold soda. Somehow, it tastes even better than it sounds.<\/p>\n<p>You won&#8217;t want to skip the food either. There&#8217;s nothing else quite like it in Ubud. And yet, the drinks are the real draw here. The bar team shakes and stirs thoughtful, precision-led cocktails with premium spirits and carefully sourced ingredients.<\/p>\n<p>There\u2019s no big party crowd here \u2013 it&#8217;s more of an immersive, atmospheric experience rather than a nightclub. It quite literally took my breath away, with sweeping, sky-high views over Ubud&#8217;s verdant river valley. This stunning bar is the signature sunset destination at Mandapa, A Ritz-Carlton Reserve, and true to its name (Ambar means &#8216;sky&#8217;) it sits high above the treetops atop the valley verge.<\/p>\n<p>You get a perfect view of the jungle sunset from any of the lounges, and while you sip your way through the expertly curated nature-inspired cocktails, you can graze on pass-around canap\u00e9s and Japanese-inspired bites. For me, I love the delicate sushi rolls and fine sashimi.
