From May, hu’u Bistro’s entire menu has been shaken (up), not stirred – blurring the lines old favourites with new, delicious sensations. It will offer a refinement of iconic dishes, naturally veering towards Balinese cuisine but still dancing around the corners of Asia, with a slight shimmy across continents to Europe. All brought you by Asia’s two leading foodologists and mixologist, naturally.
The legendary foodologist team – aka ‘Dragon and Dog’ – consists of Benson Tong (‘Dragon), who was Head Chef of Nam Nam in Denmark (only rated the best restaurant in the world), and Jason Vito (‘Dog’), famous for his French / Pan-Asian delights along with his previous life as a radio DJ. Meanwhile, mixologist Sufian Mahmoud is behind the bar whipping up cocktails from a filing cabinet of inspiration spanning magazines, music and markets.
Unusual sensory pairings and meticulous ingredient sourcing, mostly from local farms and seas, will seduce your senses, nourish your body and gratify the soul.
