We started to make our homemade bitters and liqueurs such as vermouth, chartreuse and amaretto, and in 2016, myself and Chef Will got invited to do a Masterclass by Diageo Worldclass.
Tell us your story – how did you get here?
Everything started when I was 13 years-old. I would help my grandma sell fish in the local market, until she finally opened her own warung cooking grilled fish. Working there helped build my appreciation for hospitality and entertainment. This led to my Uncle asking me to join the team as a barback at Room4Dessert Ubud, since he’d worked with Will Goldfarb previously at Ku De Ta. I joined the Room4Dessert family in 2014, while attending highschool at the same time. I soon worked my way up the ranks, from barback to bar captain, supervisor, bar manager, restaurant manager and now as a General Manager of the restaurant.
What accomplishment are you most proud of?
I’m most proud of the development of me and my friends at Room4Dessert, growing together on the same healthy ground.
What impact have you made in Bali?
Showing people how to make valuable products from waste. We have experimented with fermentation, maceration, and anything else that we can make from our by-products. What does 2022 look like for you?
A year of thinking, planning and strategising. It’s a really exciting year with an even bigger project coming up next year.
What do you love most about Bali?
What’s your first and last drink of the day?
Water is always the first and the last, it’s very important! But to make it fancy, I mostly drink fresh tangerine juice, soy milk and jamu kunyit asem in the morning, and warm water at night.
Who is your Local Legend and why?
My Room4Dessert family. The character of each and every one of them really helps to build harmony in our family, like the stars of a summer night.
