It’s no secret that we LOVE Sundara Beach Club. This upscale, oceanfront destination is truly one-of-a-kind, where luxe and leisurely lounging meets specially crafted sustainable cocktails, delivered direct to your daybed thanks to the six-star Four Seasons service. A sultry beach-club by day, and an iconic and glimmering restaurant by night – Sundara really does exceed all expectations. And that’s before we mention the 57-metre-long infinity pool…
As part of your day spent here, you can sip poolside on signature, house-infused cocktails (the Bloom of Sundara is our forever-fave) and graze on the brand new wellness-driven food menu that’s been specially developed by Miles Price (a clinical nutritionist) and Sundara’s Executive Chef, Phillip Taylor. This dynamic duo has unveiled a spectacular lineup of conscious creations, like the flash-fried crab cakes with grated coconut, carrot, coriander, chilli and smoked paprika. Or the “Beetroot-Iced Buddha Bowl” with cumin-spiced labneh, purple cabbage, snap peas, baby spinach, green apple, toasted almonds and raspberry granite. Yum!
And of course, life is all about balance, so joining these wholesome and delicious dishes is a menu of “Liquid History” cocktails – potent libations that are at once zero-waste and inspired by the rich heritage of Indonesia. Each sustainable cocktail represents different Indonesian eras, taking you from ancient times to the Spice Wars and through to Indonesia’s Independence. Try the house-infused arak (a popular tipple enjoyed in local villages today) or discover imported liquors and flavours introduced by the Portuguese, Dutch, Spanish and Japanese. Our fave is the slow-cooked Made’s Margarita, which uses a classic lime and tequila base with house-made tangerine liqueur, tangerine marmalade with andaliman pepper, finished with a smoked salt rim.
And as for that zero-waste element? Anything left over from the bar’s cocktail-making processes (for example the rind or flesh of citrus fruits) goes straight to the kitchen – an even better excuse to pair a tipple or two with some nutritious bites. And psst – you’ll want to stick around until sunset, because every day between 5 and 7pm, it’s two-for-one on signature cocktails…

While away this blissful day under the warm Balinese sun, dipping in the pool, ocean and back again.
