These private dinners, held at The Saloon, offer dinners an intimate look into the boundless creativity and imagination of Apéritif’s incubator of talents. Throughout the six-course degustation, rising stars of the culinary world draw inspiration from Executive Chef Nic Vanderbeeken’s Borderless Food concept. During this private dining experience Apéritif shines light on their own unique voices and styles. These dishes can be paired by with wines handpicked by seasoned French sommelier, Jean-Benoît.
The journey of the palate begins at the Apéritif where Balinese-inspired cocktails by Head Mixologist Panji Wisrawan connect senses to the Island of the Gods. Dive into the Research Lab, where culinary magic happens. Here, guests are able to interact closely with our chefs as they share inspirations, creative processes, and ingredient choices. The evening’s host will then usher guests to The Saloon, an elegant colonial-style private room that peeks into the dynamic energy from the adjacent kitchen.
Apéritif’s team of culinary talents personally guide guests through every dish–sharing their inspiration, creative processes and choice of ingredients. Leather-bound journals are provided to inspire guests as they chronicle their gastronomic adventures. Privé’s concludes Friday nights on a high note–a combination of divine desserts, digestifs and live jazz music. It opens up to the many unexpected delights after-dark.
