
Da Maria presents an adaptation of one of the most iconic Italian pork dishes: her Majesty, wood-roasted Porchetta. Made with local pork belly and loin, seasoned with the essentials—garlic, rosemary, black pepper, fennel seeds, and fennel fronds. We’re serving it as the filling for three different schiacciata, all made with our signature Neapolitan-style dough.

UMBRA – Wood-roasted porchetta, melted pecorino, stewed onions, black summer truffle pesto
