From mod-Sin showdowns to Michelin starred masterclasses, and even a pop-up Thai night market; there’s plenty to look forward to at the World Gourmet Summit
From Michelin stars to some of the best restaurants in Asia, Singapore’s reputation as a food capital is a solid one. So it comes as no surprise that, once more, our lil’ red dot is hosting the 21st edition of the World Gourmet Summit (WGS) – a month-long, islandwide celebration uniting some of the world’s most prestigious gourmands and gastronomes. And yes, you hungry folks, you’re welcome to join in too. Here are five key events that you must check out during WGS 2017.
There’s gonna be a mod-Sin showdown
Happening at Amoy Street’s Ding Dong – known for its playful, elevated twists on Southeast Asian cuisine – this kitchen ‘brawl’ pits its Assistant Head Chef, Miller Mai, against other mod-Sin masterminds. You’ll be the judge in this six-course dinner that’s chock-full of surprises.
Mod-Sin Showdown, 21 March, 6pm and 8pm, Ding Dong, 115 Amoy Street, Singapore 069935. $95++ per person.
Discover Canadian cuisine
Always curious about what food from Montreal and Quebec looks like, eh? Chef Quentin Glabus is a proud ambassador of the relatively elusive food culture – he was Head Canadian Chef at the Canadian Olympic House in the Rio Olympics – and he’ll be swinging by Wooloomooloo Steakhouse to whip up a feast that will answer all your questions.
Canadian Flavours, 28 March, 7pm-11pm, Wooloomooloo Steakhouse, Level 3 Swissotel The Stamford, 2 Stamford Road, Singapore 178882. $188++ per person.
Be convinced that going gluten-free ain’t all that bad
Led by gastronomy whiz and head of Tippling Club and Open Farm Community, Ryan Clift – who is gluten-intolerant himself – this masterclass will teach you how to make gluten-free grub that’s just as tantalising in this four-course dinner. Think dishes like Hokkaido scallop soup, sous vide veal loin, and roasted pork rack with five spice.
Going Gluten Free, 14 April, 7pm-10pm, Open Door Policy, 19 Yong Siak Street, Singapore 168650. $70++ per person.
Learn how to cook from the best in the world
If you wanna be a top chef, you gotta start somewhere. WGS 2017 will fill you in on top cooking techniques (and trade secrets) with exclusive masterclasses led by international Michelin starred chefs. These include Japan’s patissier extraordinaire Kiriko Nakamura, and Dutch two Michelin starred champ Jarno Eggen.

Get lost in a pop-up Thai market
It’s not all fancy-schmancy biz at WGS 2017, as the streets of Bangkok come alive in this pop-up event at Tamarind Hill Singapore. The colonial house will be transformed into a lively, bustling street market brimming with authentic Thai classics prepared by the restaurant’s team of Thai chefs, and beer that’s – wait for it – free-flow!
Taland Tamarind: A Thai Night Market, 8 April, 8pm-11pm, Tamarind Hill Singapore, 30 Labrador Villa Road, Singapore 119189. $80++ per person.
