The highlights: Maggie Joan’s will be serving up free-flow bites – and if you’ve ever dined at this hip hidden restaurant, you know the Mediterranean-laced menu by head chef Oliver Hyde is mind-blowing. Expect a spread that includes salmon tartare tacos, fried chicken pitas and more street-style eats. Why visit: Situated at the new InterContinental Singapore Robertson Quay, Publico Ristorante boasts one gorgeous alfresco area: think twinkling lights and lounging by the water with an Aperol spritz. Signature highlights: Kickstart your meal with freshly shucked oysters, antipasto of fresh burrata and tuck into slow cooked beef short ribs or monk fish.

Why visit: This is the place to see and be seen on New Year’s Eve. Situated on the Fullerton Pavillion, the sleek and sexy restaurant offers jaw-dropping backdrops of the bay.
The highlights: Choose between the four-course or six-course dinner. Both feature the cold smoked king salmon as the amuse bouche, lobster and prawn ravioli as the starter and yogurt cheesecake for dessert. Choices for the mains for the four-course include prime ribeye with caramelised foie gras torchon, with wagyu tenderloin for the six-course set.

Why visit: You might want to steer clear of skin-tight dresses for this one – at the resort’s in-house resto, Dine on 3, diners are treated to a massive 78-metre buffet spread of over 100 international specialities.
The highlights: Black pepper crab, traditional roast turkey, pan-seared foie gras, whole roast and lamb in Moroccan spices.
Cost: $138++ per adult. Children under 5 years dine free when accompanied by a paying adult, while children between 6 to 11 years years old may enjoy the buffet at $69++.

Why visit: Admittedly, we’d love any reason to head to SO Sofitel Singapore. But one of our top reasons has got to be stylish dining spot Xperience Restaurant. It’s our go-to haven for modern European cuisine with Asian influences, where dishes are masterfully crafted by the culinary team. We recommend dining early, as you’ll want to head up to HI-SO rooftop pool bar for the countdown party – at $118++, you’ll enjoy free flow of house spirits, beers, wines and a glass of champagne.

Why visit: COMO Dempsey’s latest establishment, previously only available as a pop-up at the Paddock Club, serves up healthy and refined modern fare by Executive Chef Timothy de Souza.
The highlights: The New Year’s Eve five-course Omakase menu features snacks like smoked oysters and kingfish, appetisers like fresh tuna tacos and wagyu beef with rice cakes and sides of asparagus served with basil pesto. Mains are as mouthwatering, with fish curry, roasted lamb and porchetta as your choices.

NOX Dine in the Dark
Why visit: You’re in for a mind-altering meal at NOX, as you’ll be completely shrouded in darkness as good (handi)-capable hands cater to you. This New Year’s Eve, expect to be stunned and satiate. The night begins with two different amuse bouche and glass of bubbly, before you dine in the darkness with the restaurant’s exclusive three-course menu of 14 different dishes.
The highlights: Details of the lineup are naturally scant, but from our previous rewarding experience, we’re expecting major contrasts in flavours, premium ingredients and a baffling culinary guessing game like no other.
Cost: $168 per person. Choice of a three-course wine, cocktail or mocktail pairing.

Bayswater Kitchen
Why visit: Sitting pretty at the Marina at Keppel Bay, Bayswater Kitchen is all about coastal chic with quirky features like a ping pong table and retro string art. It’s the perfect spot if you’re all about a chill New Year’s Eve. Kick back over the freshest seafood catch and views of the Mount Faber fireworks.
The highlights: Five courses of pure seafood delights, like seafood platter with grilled seafood and lobsters, crab with hand-rolled linguine, and cured Hokkaido scallops.

Faber Peak Singapore’s Sky Dining
Why visit: Head to the skies for a New Year’s Eve celebration you’ll never forget. Hop on board a cable at Faber Peak to catch the last sunset of 2017 over a four-course dinner. You’ll dine in complete isolation, with music to accompany your romantic meal via speakers. If you’re curious about how it works, meals are swapped out after every round at Faber Peak. Psst…It’s the perfect spot to pop ‘the question’. For the ultimate luxe experience, book the Celebration Cabin for a party of six ($498++ for six guests for 90 minutes), and be pampered with a dessert platter, and two bottles of Champagne with an unbeatable view of fireworks to boot.

The Dempsey Cookhouse and Bar
Why visit: Hands down, The Dempsey Cookhouse and Bar is one of Singapore’s most beautiful restos of the ‘mo. Towering banana leaf plants, greenery in every corner, rattan peacock chairs and massive lamps flanking the ceiling…how could we not love it?
The highlights: The five course set menu includes a starter of toasted organic egg yolk with caviar and herbs, tuna tartare, pumpkin seed crusted sea trout and wagyu sirloin.

Blackwattle
Why visit: In this month’s Hot New Tables, our editor Selina raves about Blackwattle and makes a bold claim that “Amoy Street has never been so exciting.” She credits this to the restaurant’s zero-attitude and elegant, intelligent cuisine. You know you’re dying to check it out.
The highlights: In celebration of Blackwattle’s first New Year’s Eve, Head Chef Joeri Timmermans is pulling out all the stops with a six-course New Year’s Eve menu with silky stormshell clams with rosemary dashi, wagyu beef tongue with charred cucumber and miso ice cream served with an interesting combination of persimmon and citrus meringue and puffed rice.
Cost: $150 with optional beverage pairing of $115.
