Clock is ticking to try the epic kebabs from Le Bab London
We gave you the heads up that London’s cool, casual kebab joint Le Bab was coming to Singapore to take over the kitchen at Fat Price, but we’ve just come back from the first lunch serving and consider yourself warned. If you don’t get down to Peck Seah st before dinner on Wednesday 28 November, you’re going to have to factor in a London jaunt.
Cameo appearances and chef takeovers are a thing right now, but the Le Bab crew Stephen Tozer, Ed Brunet and head chef Manu Canales are making their Singapore tasting menu even more covetable by sticking around at Fat Prince for just 48 hours. With the Soho and Singapore restaurants both nailing the playful approach to Modern Eastern bites and Ed having spent time in Singapore growing up, the popup seems serendipitous.
And here’s why you need to do this: the Le Bab boys, who are usually all about the charcoal factor, have had a damn good time with local ingredients. They’ve swapped harissa for sambal (so shiok), achar for pickles and sourced local paneer for their iconic paneer kebab.
Yes you should order both the Lokma Donut with a centre of chicken liver parfait and a sprinkle of rose, and the Le Bab Bhaji: so much depth in a little ball of braised lamb shoulder. “You can’t go wrong with deep-fried, slow-cooked meat,” shrugs Ed.
Back to the kickass kebabs. Order them all. You’ve already got the paneer, which nails the tenderness and crunch combo and uses beetroot and coconut puree, curry mayo and onion rings to deliver all the umami goodness. Then there’s squid: so tender after a turn over the coals; then the chicken shish spiked with pickled daikon; and the Singapore special: a 15-hour pork kebab with crackling and achar – which was born purely out of the urge to play with the earth pit oven at Fat Prince.
As far as fleeting pleasures go, we managed to stretch ours out over three hours. And we need to start a petition to keep these boys here longer.
