In our view, one of the best things about going on vacation is the opportunity to sample the local foodie delights of an entirely new cuisine. Catch wind of a hotspot with rubbish grub, and it immediately gets scratched off our vacay bucket-list; yes, food really is that important! So excuse us for getting hyped upon learning that five of our favourite cuisines in the world are set to feature in a foodie pop-up entitled Epicurean Journeys at the end of this month. The best bit? No need to set foot off the island to indulge!
Hosted by The Luxury Collection Hotels & Resorts group, five top chefs from around its luxe hotel network are flying into Singapore to showcase their foodie prowess and the very best of what their respective countries – and hotels – have to offer. What’s on the menu? Greek, Italian, Indian, Thai and Austrian, that’s what. We’re going to stop eating now to ensure there’s enough stomach space to scoff the lot; who’s with us? India
Corporate Chef Manjit Gill from the ITC Luxury Collection Hotels in India kicks off proceedings with what can only be described as a sumptuous Indian banquet. The extravagant 10-course Prithvi Rasa: A Journey of 6 Tastes menu sounds exquisite; think char-grilled jumbo prawns marinated in yoghurt, chilli and turmeric; black lentils with tomato, ginger and garlic; lamb biryani; and a selection of beautiful Indian breads. Can you say food coma?

Italy
Dario Parascandolo, Executive chef of the Hotel Danieli in Venice, takes the reins to showcase the very best of Italian cuisine. The six-course menu features whipped codfish cannolo, Venetian grilled octopus, pumpkin and rosemary risotto, broccoli tortelli with lobster, and sea bass with razor clams. If that hasn’t got you salivating, a classic tiramisu to round things off should do the trick.

Thailand
Pass the chilli! Executive Sous Chef, Manachai KonKangplu, from the Sheraton Grande Sukhumvit in Bangkok, will be taking diners on a whirlwind through Thailand’s culinary regions during this six-course extravaganza. Expect elevated soups, curries, and salads that will tantalise the taste buds. Finish up with the best Thai dessert, ever: sticky rice with mango. Yes please!

Greece
Executive Chef, Sotiris Evangelou, of the Hotel Grande Bretagne in Athens, is serving up a plate-smashing, six-course Greek feast that guarantees to bring a taste of the sunny Med to Singapore. We’re intrigued by the Greek salad sorbet with molecular Kalamata olives (what!), Octopus with Santorini’s fava, squid, white tarama and ouzo sorbet; and the baby lamb fillet, with a smoked eggplant trilogy with raisins, pine-nuts and tzatziki foam. Sounds like a masterclass in molecular gastronomy to us!

Austria
Little fingers up! There is no afternoon activity more refined than sitting down for high tea. And Executive Chef, Manuel Gratzl from Hotel Bristol in Vienna, brings a touch of Viennese class to the final stop on this gastro adventure. Expect delicate tiers of petite savoury and sweet treats including the likes of banana cake, caramel apple, macarons, beetroot marshmallow (yes, really!), alongside chorizo madeleines, smoked duck and smoked salmon with cucumber canapes. If that’s not enough, there’re also classic Viennese specialities on the menu including apple strudel, Schonbrunn pancakes (they’re stuffed, in case you wondered) and cardinal cake. Sounds delish!
