Le Binchotan
Eastern and Western influences come together in exquisitely crafted cocktails in this snazzy new addition to Amoy Street’s bustling bar scene (pictured above). Head bartender, Sugar Ray Ruban, works his magic behind the bar, creating popular classics as well as unique concoctions like the cheekily named Sake My Cucumber. Hungry? Not to worry, Le Binchotan also offers izakaya-style dishes that marry Japanese ingredients with French culinary techniques.

S Bar
The Club Street bar scene gets a little more exciting with Senso’s newly revamped bar. Inspired by La Dolce Vita, The S Bar brings the glitz and glamour of ’50s Italy to the popular nightlife destination. Enjoy classic Italian-inspired cocktails like the classic Aperol Spritz and the Negroni, or contemporary creations like the Romantico with its sweet thyme finish.

Craft Beer Bar Takumi
Craft beer fiends are no doubt familiar with JiBiru’s plethora of Japanese craft brew offerings at 313@Somerset. But if you can’t get enough of that, its sister establishment, Takumi Craft Beer Bar, has opened its doors at Mandarin Orchard Hotel. Like JiBiru, the bar boasts Japanese izakaya-style elements as well as many of JiBiru’s most popular beers on tap. Picky alehounds can look forward to limited edition and seasonal brews like Shiga Kogen’s Salty Hop, Baby Miyama Blonde and Indian Summer Saison.

The Other Room
“Speakeasy” is a description thrown around a lot these days, but The Other Room is probably one of the few bars we’ve found that are really hidden away, with only the scantest online presence. This “drinking house for the discerning” offers expertly crafted cocktails that pay homage to classic drinks while adding contemporary twists. Holding court behind the bar is Master Bartender Dario Knox, previously of FOC.

Quaich
If you know your Islays from your Highlands, you’ll feel right at home at Quaich Bar’s second outlet at The South Beach in Singapore. The bar, designed by Barcelona-based Lagranga Design, boasts innovative fixtures like a “whisky light” bar and a custom pot still lamp, so you’ll be sipping your Speysides in style. The bar showcases a spectacular variety of boutique, rare and collectible single malts, also available by the dram. Want to get into whisky?
