For the love of tradition: Yule cakes
Inspired by nostalgic memories of his hometown in France and the traditional gifting of the Yule log, Chef Sebastien has come up with five novel flavors of Yule cake. Fans of boozy Christmas sweets will love the chocolate egg nog brandy log cake with its crunchy, spiced eggnog base, layers of chocolate mousse and St. Rémy’s Brandy. Other unconventional flavours include salty caramel chocolate, apple caramel with cinnamon and coconut, blueberry raspberry violet with vanilla cremeux and the pear verbena mint chocolate nugget.
For a dessert table centrepiece: Pear chestnut Mont Blanc tart
Dress up your dessert table with this striking pear tart that’s shaped to look like the awe-inspiring Mont Blanc Mountain. This eye-catching dessert is a mélange of vibrantly flavoured poached pears and chestnuts on a silky smooth curd that contrasts nicely with its crisp buttery shell. A smothering of nutty chestnut paste completes the dish.
For a twist on an old classic: White Forest cake
