But if you’re getting a little tired of the usual eggs benedict and pancakes routine, InterContinental Singapore’s European brasserie restaurant, Ash & Elm, now not only offers unlimited caviar, fresh seafood, juicy roasts, premium Champagne and cocktails, but also three new tasting platters comprising 11 breakfast-inspired a la minute gourmet dishes, specially created by Executive Sous Chef Philippe Duc. You’ll get to delight in as many servings of these reinvented brunch favourites as you like, and they’ll be served right to your table!
Indulge your inner carnivore with hearty picks from the “From The Land” platter. Crispy and savoury strips of bacon are a must for brunch, in our books. But why stop at just bacon? Pair it with corn-fed French roast chicken for a delicious and robust option that comes with roasted yellow chicken breast, polenta and bacon. Another brunch staple for us is brioche – if, like us, you just can’t resist bread, you’re going to love the pan-fried duck foie gras on toasted brioche, where a buttery toast is topped with French duck foie gras and spiced apple marmalade for a refreshing lift to the dish– getting hungry yet?

For a lighter option, select from the “From The Sea” platter. It’s no secret that we love eggs benedict for breakfast, but how about a seafood spin on the classic dish? Dig into the baked sea bass with asparagus, where fresh Mauritian sea bass is served with a generous portion of creamy hollandaise sauce. If you have a penchant for sweet and savoury items such as bacon pancakes or fried chicken waffles, we recommend the juicy, pan-seared Hokkaido scallops, served with pancakes and brown butter sauce. Load up on your favourite greens with the “From the Garden” platter. We’re always up for grilled mushrooms for brunch, which is why we love the shimeji mushrooms and mascarpone ravioli. These umami-rich mushrooms are stuffed into handmade dumplings along with rich Italian cream cheese. And of course, what’s brunch without eggs? The eggplant “Parmigiana” sees grilled eggplant layered with Mozzarella di Bufala, Parmesan and tomatoes topped with a perfectly poached egg.
