Chef Ho Chun Hung has recently taken on the role of Chef de Cuisine at Sha Tin 18, and we went over to try out his new menu that features Cantonese, Dongguan and Northern Chinese cuisine
We are an international team here at Honeycombers Hong Kong, so it’s no surprise that we love to eat great food from across the globe. From French cuisine to Taiwanese food and everything in-between we enjoy discovering new flavours and eating food that tastes delicious (who doesn’t, right?!) So, when were invited to try out the new menu at Sha Tin 18, we were excited to see what Chinese dishes new Chef de Cuisine Chef Ho Chun Hung had in store for us.
New Chef de Cuisine at Sha Tin 18
Located at Hyatt Regency Hong Kong, Sha Tin in a space designed by Steve Leung, Sha Tin 18 specialises in Cantonese, Dongguan and Northern Chinese cuisine, and offers stunning views of the surrounding area. Thanks to its open kitchen environment, guests can enjoy watching the team of chefs whip up the specialty dishes as they eat, and it’s a great place to see the intricacies and subtleties of individual dishes come to life.
Chef Ho is now Chef de Cuisine at the events section of the hotel, as well as taking on the lead role at Sha Tin 18.
Flavours at Sha Tin 18
Chef Ho specialises in creating homemade sauces that can only be found at Sha Tin 18 – which is great, as it means you can pick some of them up to take home with you. The preserved green beans, wild chilli sauce is prepared with garlic, preserved green beans, yellow and red bell peppers, Chinese wine and other ingredients, which are fermented together for 20 days to give it its unique flavour.
The sauce is used in a selection of dishes at the restaurant, including the steamed garoupa belly, preserved green beans, wild chilli, where it really ramps up the flavour of the garoupa and the steamed pork tripe, pomelo peel, wild chilli.
Others dishes we loved during our trip to Sha Tin 18 were the wok-fried prawns with bamboo and the beancurd, green beans and pine nuts dish, that was super fresh and tasty. Another superstar/must-try dish is the homemade chocolate ice cream that is infused with Chinese wine. Rich and moreish, though this may sound like a unique combination, the flavours work perfectly together and had us suggesting that they box it and sell it at 7-Eleven.
The menu at Sha Tin 18 is HUGE, so it has a little something for everyone. We’ll definitely be back to enjoy more delightful Chinese flavours – including the dim sum offerings – made with seasonal ingredients from the team.
